The key to tender London Broil is marinating time.
Pierce the meat several times with a fork. Coat both sides of the meat with your favorite marinade. Place it in a glass pan and refrigerate it all day (6-8 hours).
Broil, roast or grill to desired temperature (rare 140˚, medium 160˚ or well done 170˚).
Allow meat to rest for 2-5 mimutes after cooking to retain juiciness. Top with additional fresh marinade (not leftover) or gravy.
