Ingredients:
1 box cous cous (original or plain)
3 c. finely chopped parsley
1/2 c. finely chopped mint
4-5 scallions chopped (w/ green part)
4-5 roma tomatoes, chopped small
1/2 c. lemon juice
4 T. olive oil
salt & pepper to taste
Directions:
Prepare box of cous cous according to directions. Combine with remaining ingredients in a bowl. Toss and serve.
