  • Corn on the Cob – Southwestern Roasted

Preparing the corn:

Peel back corn husks without removing them.
Remove as much silk as possible (remainder will burn off when roasting).
Replace husks over corn and soak in water for at least 30 mins.
Soaking the corn will keep it moist when roasting by releasing steam.

Seasoning the corn:

Peel back husks.
Butter the corn. 
Sprinkle corn with the following (to taste): Finely chopped cilantro of dried coriander
                                                                                  Ground Cumin
                                                                                  Minced garlic (in jar) or garlic powder
                                                                                  Cayenne Pepper
                                                                                  Lime juice
                                                                                  Lime zest
                                                                                  Salt & pepper

Replace husks over corn and wrap corn in foil.
Roast over hot charcoals or in the oven at 375˚ for 20-25 mins., or until steam is released when foil is opened.
Carefully remove foil and husks, and enjoy!
