Ingredients:
1 med. acorn squash
2 T. maple syrup
1 T. olive oil
1/2-1 t. red pepper flakes
1/2 t. salt, divided
1/2 t. freshly ground black pepper, divided
1/2 c. shredded mozzarella cheese
1/4 c. crumbled gorgonzola cheese
Directions:
Preheat oven to 375˚.
Cut squash in half and scoop out seeds. Slice squash into 1/2″ wide half moons and place in a medium bowl. Toss squash with syrup, olive oil, red pepper flakes and half the salt and pepper. Place on a parchment-lined baking sheet in a single layer and bake until tender golden, about 20-25 minutes.
Toss cheeses together in a small bowl. Sprinkle cheese mixture over squash and bake an additional 5 minutes, or until cheese is melted. Remove squash from oven and sprinkle with remaining salt an pepper. Use a spatula to lift squash slices from baking sheet and place on plate. Serve immediately.
