2 med. tomatoes, chopped with seeds removed
1 c. fresh blueberries
1/2 c. chopped sweet onion
2 cloves garlic, minced
1 jalapeno pepper, minced with seeds removed
2 T. fresh cilantro, chopped
2 T. fresh mint, chopped
2 T. fresh lime juice
2 T. olive oil
pinch of salt
salt and pepper to taste
In a medium bowl, combine tomatoes, blueberries, onion, garlic, jalapeno, cilantro and mint. Pour in lime juice, olive oil and sugar and stir gently until mixed. Season with salt and pepper if desired.
Serve with tortilla or pita chips.
