Irish Potato Balls



2 c. cooked mashed potatoes

1/2 c. grated cheddar cheese

1/2 c. scallions, finely chopped (include green parts)

1/4 c. corned beef, finely chopped

1/4 c. bacon, finely chopped

1 T. parsley, finely chopped

1 clove garlic, finely chopped

2 eggs beaten

1 c. bread crumbs


Combine first eight ingredients in a bowl to make potato mixture. Use a melon baller or form potato mixture into balls and place on a baking sheet. Refrigerate until firm (about 30 mins.). Preheat oven to 450˚.  Rolls potato balls in bread crumbs and return to baking sheet. Bake at 450˚ for 15 mins.
