Combine first eight ingredients in a bowl to make potato mixture. Use a melon baller or form potato mixture into balls and place on a baking sheet. Refrigerate until firm (about 30 mins.). Preheat oven to 450˚. Rolls potato balls in bread crumbs and return to baking sheet. Bake at 450˚ for 15 mins.
