Pasta With Broccoli Rabe & Sweet Italian Turkey



1 lb. The Butcher Shoppe’s sweet Italian turkey sausage

1 bunch broccoli rabe, washed with 2″ trimmed off stems

1 c. chicken broth

1 t. olive oil

5-6 cloves garlic, chopped

1 lb. pasta (your choice)

1/4 c. grated parmesan cheese

crushed red pepper flakes to taste (optional)

salt and pepper to taste


Cut broccoli rabe in quarters (don’t remove leaves). Bring large pot of water to boil. Add broccoli rabe to pot and blanch for 1-2 minutes. Drain pot and put broccoli rabe aside. Refill pot with water and salt for pasta. Return to boil and cook pasta according to instructions on box. In a deep sauce pan, brown sausage over medium heat, breaking sausage apart as it cooks. Remove sausage from pan with slotted spoon. Add garlic to pan and saute lightly (add olive oil if necessary). Add broccoli rabe to garlic. Cook about 1 minute. Add sausage to pan and cook an additional minute. Drain pasta and add to pan. Reduce heat and stir for about 30 seconds. Add chicken broth and parmesan cheese. Add crushed red pepper flakes and adjust salt and pepper to taste at this point. Toss everything in pan to coat pasta with sauce. Remove from heat and serve.
