1 lb. pasta (your choice)
1 lg. or 2 sm. zucchini, halved and thinly sliced
1 tomato, seeded and diced
1/2 c. olive oil
1/2 c. basil pesto or chopped fresh basil
1/2 c. slivered almonds, toasted
1/2 c. shredded parmesan cheese
juice of a half lemon
1/2 t. minced garlic (optional)
salt and pepper to taste
Cook and drain pasta well. In a large bowl, combine al remaining ingredients. Add pasta and toss. Serve chilled or at room temperature.
