In a bowl, mix first 7 ingredients to make sauce and put it aside. Place one piece of chicken in center of a piece of foil. Pour enough sauce over chicken to cover both sides. Add 1 slice of lemon and a couple sprigs of thyme. Seal foil pack well with everything inside and repeat for the remaining pieces of chicken. Cook over medium high heat on grill for about 4 minutes per side until chicken has an internal temp of 165 degrees. Remove chicken from foil, brush on remaining glaze and serve.
