Sweet and Spicy Pineapple Slaw



1 8oz. can pineapple (chunks, pieces or crushed), reserve juice

1 16 oz. bag of 3 color Deli Cole Slaw

1/2 jalapeno pepper, deseeded and minced

1 T. olive oil

1 T. honey

1 T. lemon juice

1/4 t. minced ginger

1 T. toasted sesame seeds (optional)

salt & pepper to taste


Combine fruit, cole slaw and jalapeno pepper in a large bowl. In a small bowl, whisk together 2 T. pineapple juice, oil, honey, lemon juice and ginger to make a vinaigrette. Pour vinaigrette over fruit slaw and toss to coat. Chill at least 4 hours. Toss again before serving.
