6 lb. seedless watermelon, diced 9 cups
2 T. fresh mint, chopped
1 T. sugar
2 T. fresh lemon juice
1 cup white wine (lightly sweet such as riesling or 3/4 c. water mixed with 1/4 c. sugar)
1 t. ginger, chopped
1/4 c. sparking wine or water
Blend watermelon, lemon juice, wine (water/sugar mixture) and ginger in a blender until smooth.
Let sit for a half hour. Strain soup. Garnish with mint sprig or a teaspoon of crumbled feta for a sweet, salty taste.
