6 halves, angel food cups (or 1 1/2" slices)
1/2 cup heavy cream
1/3 cup & 2 Tbs sugar (separated)
1 1/2 tsp vanilla extract
1/2 cup mascarpone OR 4 oz. cream cheese
1 Tbs cornstarch
1/2 cup water
2 Tbs balsamic vinegar
1 cup blueberries
1 cup raspberries or strawberries (or 1/2 cup both)
1/4 - 1/2 tsp coarsely ground black pepper
Prep: 10 mins
Cook: 15 mins
Beat cream, 2 Tbs sugar, and vanilla in a large bowl with electric mixer on medium speed until soft peaks form. Gently stir in mascarpone or softened cream cheese. Cover and refrigerate until ready to serve.
Mix remaining 1/3 cup sugar and cornstarch in medium saucepan. Stir in water and vinegar until well blended. Stir in blueberries. Bring to a boil over medium heat, stirring constantly, about 1 minute. Pour into medium bowl to cool slightly. Add remaining berries and pepper. Toss gently to coat.
Grill angel food slices over medium heat 45-60 seconds per side or until golden brown grill marks appear. Spoon berry mixture over the top of each slice and top with cream.
