Spring Vegetables & Quinoa
Bring a large saucepan filled with water to a boil. Add asparagus and peas; boil 2 minutes. Drain and plunge into a bowl of ice water. Drain.
Form ingredients into loaf pan. Bake at 350 degrees with syrup for about 1-1/2 hours, possibly with reduced heat the last half hour. Baste occasionally with syrup, which will be thick when done.
Combine all ingredients in a bowl. Mix thoroughly and serve. For variations, add some of the following ingredients: black beans, cucumbers, hot peppers, green onions, bell peppers, tomatillos, etc. Be creative!
